Fresh Peach & Goat Cheese Crostini

Here's a great summer appetizer that works perfectly with Colorado peaches:

Ingredients (Makes 12-16 crostini)

  • 1 French baguette, sliced ½-inch thick

  • 2-3 ripe fresh peaches, thinly sliced

  • 8 oz goat cheese, softened

  • 2 tbsp honey (plus extra for drizzling)

  • 1 tbsp olive oil

  • Fresh basil leaves, thinly sliced

  • Flaky sea salt

  • Freshly ground black pepper

  • Optional: balsamic glaze

Instructions

1. Toast the bread

  • Heat oven to 400°F.

  • Arrange baguette slices on a baking sheet.

  • Brush lightly with olive oil.

  • Bake 8-10 minutes until golden and crisp.

2. Prepare the goat cheese

  • Mix goat cheese with 2 tablespoons honey until spreadable.

  • If needed, add a teaspoon of milk or cream.

3. Assemble

  • Spread a generous layer of goat cheese on each crostini.

  • Top with peach slices.

  • Sprinkle with basil.

4. Finish

  • Drizzle lightly with honey.

  • Add a tiny pinch of flaky sea salt.

  • Fresh cracked black pepper.

  • Optional: a few drops of balsamic glaze.
