Fresh Peach & Goat Cheese Crostini
Here's a great summer appetizer that works perfectly with Colorado peaches:
Ingredients (Makes 12-16 crostini)
1 French baguette, sliced ½-inch thick
2-3 ripe fresh peaches, thinly sliced
8 oz goat cheese, softened
2 tbsp honey (plus extra for drizzling)
1 tbsp olive oil
Fresh basil leaves, thinly sliced
Flaky sea salt
Freshly ground black pepper
Optional: balsamic glaze
Instructions
1. Toast the bread
Heat oven to 400°F.
Arrange baguette slices on a baking sheet.
Brush lightly with olive oil.
Bake 8-10 minutes until golden and crisp.
2. Prepare the goat cheese
Mix goat cheese with 2 tablespoons honey until spreadable.
If needed, add a teaspoon of milk or cream.
3. Assemble
Spread a generous layer of goat cheese on each crostini.
Top with peach slices.
Sprinkle with basil.
4. Finish
Drizzle lightly with honey.
Add a tiny pinch of flaky sea salt.
Fresh cracked black pepper.
Optional: a few drops of balsamic glaze.
