Tomato & Peach Salad

This is one of the best ways to use peak-season peaches. The sweet peaches and juicy tomatoes balance each other perfectly.

Ingredients (4 servings)

  • 2 ripe peaches, sliced into wedges

  • 2 large heirloom tomatoes, cut into wedges

  • ¼ red onion, very thinly sliced (optional)

  • ¼ cup fresh basil leaves

  • 4 oz goat cheese or fresh mozzarella (or burrata)

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp balsamic vinegar or balsamic glaze

  • Flaky sea salt

  • Freshly ground black pepper

Instructions

  1. Arrange peaches and tomatoes on a serving platter.

  2. Scatter basil leaves and red onion over the top.

  3. Crumble goat cheese (or tear mozzarella/burrata) over the salad.

  4. Drizzle with olive oil and balsamic.

  5. Finish with flaky salt and freshly cracked black pepper.

Variations

Peach, Tomato & Burrata

Replace the goat cheese with creamy burrata and serve with grilled bread.

Peach Caprese

Use fresh mozzarella and add extra basil. Skip the onion.

Peach, Tomato & Arugula

Toss everything with a few handfuls of arugula for a heartier salad.

Dressing Upgrade

Whisk together:

  • 3 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp honey

  • 1 tsp Dijon mustard

  • Pinch of salt and pepper

Drizzle just before serving.
