Peach Bellini

The classic Bellini was created at Harry's Bar in Venice and is one of the best cocktails for fresh peach season.

Ingredients (2 drinks)

  • 2 ripe fresh peaches, peeled and sliced

  • 1 tsp lemon juice

  • 4-6 oz chilled Prosecco

  • Optional: 1 tsp simple syrup or honey (if peaches aren't very sweet)

Instructions

Make the Peach Purée

  1. Blend peaches and lemon juice until completely smooth.

  2. Taste and add a little sweetener if needed.

  3. For an ultra-smooth Bellini, strain through a fine-mesh sieve.

Assemble

  1. Add 2-3 tablespoons peach purée to each Champagne flute.

  2. Slowly top with chilled Prosecco.

  3. Stir gently once or twice.

  4. Serve immediately.

Frozen Peach Bellini

Blend:

  • 2 cups frozen peaches

  • ½ cup Prosecco

  • 1 tbsp lemon juice

  • 1 tbsp honey

Serve in chilled glasses.

Non-Alcoholic Version

Replace the Prosecco with:

  • Sparkling water

  • Sparkling white grape juice

  • Sparkling peach water
